i've never done the whole lot myself but i have helped out at a couple pig roasts.

dont forget to dry well, score the skin and rub in salt for that perfect crackling.
otherwise low and slow, pretty straightforward.

eta, use an adjustable blade craft/stanley knife for the scoring as opposed to a chefs knife. Much less chance of going through and cutting the meat.

thats pretty cool, we've only ever done it on a spit over a fire.
eta looks like it might need a bit less tending if you have it splayed on the grill.

i certainly get the impression with the spit method that there is a fine line between getting the right sort of crackling, and overdoing the meat.

My mother's husband does a pig roast every year and he gets around 60-70 people. We still have leftover pork for months.

ETA: I really want to have a pig roast but I think I even know 65 people. I can't eat all that pork by myself.
